Preparation
- Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, combine the rolled oats and a pinch of salt.
- In another bowl, mix together the creamy peanut butter, honey, and vanilla extract until smooth and well-blended.
- Pour the peanut butter mixture into the bowl with oats. Stir together until fully incorporated. If you’re using chocolate chips, fold them in now.
- Spread the mixture evenly into the lined baking pan. Press it down well so that the bars hold together.
- Bake for about 15-20 minutes or until the edges start to turn golden.
- Remove from the oven and allow them to cool completely in the pan before lifting them out using the parchment overhang.
- Cut into bars and enjoy!
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to 3 months. Thaw at room temperature or microwave for a few seconds.
