  • 2 cups rolled oats
  • 1 cup creamy peanut butter Choose creamy or crunchy based on preference.
  • 1/2 cup honey or maple syrup Can substitute with agave nectar for a different flavor.
  • 1/2 cup chocolate chips Optional, for added sweetness.
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances flavor.

Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, combine the rolled oats and a pinch of salt.
  3. In another bowl, mix together the creamy peanut butter, honey, and vanilla extract until smooth and well-blended.
  4. Pour the peanut butter mixture into the bowl with oats. Stir together until fully incorporated. If you’re using chocolate chips, fold them in now.
  5. Spread the mixture evenly into the lined baking pan. Press it down well so that the bars hold together.
  6. Bake for about 15-20 minutes or until the edges start to turn golden.
  7. Remove from the oven and allow them to cool completely in the pan before lifting them out using the parchment overhang.
  8. Cut into bars and enjoy!

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to 3 months. Thaw at room temperature or microwave for a few seconds.
