  • 1 bag (32 oz) frozen tater tots
  • 1 cup diced bell peppers any colors you like
  • 1 cup diced onions
  • 1 cup chopped spinach
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup non-dairy milk almond or soy
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine your diced bell peppers, onions, chopped spinach, and black beans. Season with garlic powder, onion powder, salt, and pepper, mixing everything well.
  3. Grease a large casserole dish with a little oil. Spread the veggie and bean mixture evenly across the bottom.
  4. Pour in the non-dairy milk and sprinkle nutritional yeast over the top for that cheesy flair.
  5. Arrange the tater tots on top in a single layer. It’s totally fine if they’re slightly overlapping!
Cooking
  1. Bake in your preheated oven for about 30-35 minutes, or until the tater tots are golden brown and crispy.
  2. Remove from oven, let it cool slightly before serving, and garnish with any optional toppings you prefer!

Notes

For substitutions, feel free to switch out veggies for mushrooms, zucchini, or corn. Prepare the filling a day before to save time. Ensure tater tots are in a single layer to avoid sogginess.
