Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Flatten the chicken breasts using a tenderizing mallet or a rolling pin, and season both sides with salt, pepper, garlic powder, and Italian herbs.
Filling
  1. In a bowl, mix the roasted red peppers, chopped spinach, and mozzarella cheese until well-combined.
Stuffing
  1. Place about 1/4 of the filling onto one side of each chicken breast. Gently fold the other half over the filling and secure with toothpicks if needed.
Baking
  1. Transfer the stuffed chicken breasts to a baking dish. Drizzle a bit of olive oil over the top.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
Serving
  1. Remove from the oven, let it rest for a few minutes, and serve. Don’t forget to take out the toothpicks before serving!

Notes

For variations, consider swapping mozzarella for feta cheese or adding sun-dried tomatoes. Ensure chicken reaches an internal temperature of 165°F (75°C) for safe consumption. Store leftovers in an airtight container in the refrigerator for up to 3 days.
