Preparation
- Preheat your oven to 375°F (190°C).
- Flatten the chicken breasts using a tenderizing mallet or a rolling pin, and season both sides with salt, pepper, garlic powder, and Italian herbs.
Filling
- In a bowl, mix the roasted red peppers, chopped spinach, and mozzarella cheese until well-combined.
Stuffing
- Place about 1/4 of the filling onto one side of each chicken breast. Gently fold the other half over the filling and secure with toothpicks if needed.
Baking
- Transfer the stuffed chicken breasts to a baking dish. Drizzle a bit of olive oil over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
Serving
- Remove from the oven, let it rest for a few minutes, and serve. Don’t forget to take out the toothpicks before serving!
Notes
For variations, consider swapping mozzarella for feta cheese or adding sun-dried tomatoes. Ensure chicken reaches an internal temperature of 165°F (75°C) for safe consumption. Store leftovers in an airtight container in the refrigerator for up to 3 days.
