Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked quinoa or rice, shredded cheese, chopped vegetables, eggs, garlic powder, and seasoning. Mix everything well until fully combined.
  3. Grease a mini muffin tin with cooking spray or oil to prevent sticking.
  4. Scoop the mixture into the mini muffin cups, filling each one about three-quarters full.
  5. Bake in the preheated oven for about 15-20 minutes, or until the bites are golden brown on top.
  6. Remove from the oven and let cool for a few minutes before carefully removing them from the tin.
