  • 1 cup gluten-free all-purpose flour Can use almond flour or a gluten-free blend as a substitute.
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice) Any cheese can work based on your palate.
  • 1 teaspoon baking powder For raising the waffles.
  • ½ teaspoon garlic powder Adds flavor.
  • ½ teaspoon onion powder Adds flavor.
  • salt to taste Salt and pepper Adjust according to preference.

Wet Ingredients
  • ½ cup milk (dairy or non-dairy)
  • 2 large eggs
  • ¼ cup melted butter or oil Either can be used.

Method
 

Preparation
  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large mixing bowl, whisk together the gluten-free flour, baking powder, garlic powder, onion powder, salt, and pepper until evenly combined.
  3. In a separate bowl, beat the eggs, then add in the milk and melted butter (or oil) and mix until well combined.
  4. Pour the wet ingredients into the dry ingredients, and stir until just combined. Gently fold in the shredded cheese.
Cooking
  1. Grease the waffle maker lightly with cooking spray if needed, and pour the batter into the waffle maker.
  2. Close the lid and cook according to your waffle maker’s instructions (usually for about 5 minutes or until golden and crispy).
Serving
  1. Carefully remove the waffles and serve hot with your favorite toppings such as sour cream, chives, or a sprinkle of chili flakes.

Notes

Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 3 months. Reheat in a toaster or oven.
