Preparation
- Preheat your oven to 425°F (220°C).
- Rinse and halve the baby potatoes, ensuring they are of even size for uniform cooking.
- In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and dried oregano. Toss the halved potatoes in this mixture until well-coated.
Cooking
- Spread the potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, tossing halfway through for even roasting.
- Once roasted, sprinkle the crumbled feta cheese on top and return to the oven for an additional 5 minutes to allow the feta to melt slightly.
- Remove from the oven and garnish with fresh parsley before serving hot.
Notes
For a different flavor, substitute feta with crumbled goat cheese or dairy-free cheese. Avoid overcrowding the baking sheet for crispy potatoes.
