  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (optional) For garnish

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse and halve the baby potatoes, ensuring they are of even size for uniform cooking.
  3. In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and dried oregano. Toss the halved potatoes in this mixture until well-coated.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, tossing halfway through for even roasting.
  2. Once roasted, sprinkle the crumbled feta cheese on top and return to the oven for an additional 5 minutes to allow the feta to melt slightly.
  3. Remove from the oven and garnish with fresh parsley before serving hot.

Notes

For a different flavor, substitute feta with crumbled goat cheese or dairy-free cheese. Avoid overcrowding the baking sheet for crispy potatoes.
