Ingredients
  

Cookie Base
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup grated Comté cheese Can substitute with Gruyère or aged cheddar.
  • 1/4 cup caramelized onions Onions should be caramelized until golden.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten For brushing top of cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter with the salt and black pepper. Cream the mixture until it is light and fluffy, about 2-3 minutes.
  3. Gently fold in the grated Comté cheese and caramelized onions until everything is evenly mixed.
  4. Gradually add the flour, stirring until combined. The dough may appear crumbly.
  5. Roll small portions of the dough into balls or shape them into cookies on a lined baking sheet, leaving space between each.
  6. Lightly brush the tops of each cookie with the beaten egg for a golden finish.
Baking
  1. Bake the cookies in the preheated oven for 15-20 minutes or until they are golden brown.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the oven to restore crisp texture. Can freeze dough for up to 3 months.
