Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the softened butter with the salt and black pepper. Cream the mixture until it is light and fluffy, about 2-3 minutes.
- Gently fold in the grated Comté cheese and caramelized onions until everything is evenly mixed.
- Gradually add the flour, stirring until combined. The dough may appear crumbly.
- Roll small portions of the dough into balls or shape them into cookies on a lined baking sheet, leaving space between each.
- Lightly brush the tops of each cookie with the beaten egg for a golden finish.
Baking
- Bake the cookies in the preheated oven for 15-20 minutes or until they are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the oven to restore crisp texture. Can freeze dough for up to 3 months.
