  • 1 lb sausage (your choice: turkey or chicken) Choose turkey or chicken for a leaner option.
  • 2 medium sweet potatoes, diced Cut into even pieces for uniform cooking.
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 4 cloves garlic, minced Watch while cooking to avoid burning.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional) Adds additional flavor.
  • Fresh parsley to taste for garnish (optional) Adds a nice touch before serving.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, and paprika (if using).
Cooking
  1. Spread the sweet potatoes out on a baking sheet in a single layer and bake for 20 minutes.
  2. While the sweet potatoes are baking, in a skillet over medium heat, cook the sausage until browned and cooked through (about 8–10 minutes). Remove from heat and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Stir in honey and a splash of water, and then let it simmer for 2–3 minutes.
  4. After 20 minutes, take the sweet potatoes out of the oven and add the cooked sausage on top. Drizzle the honey garlic sauce over everything.
  5. Return the baking sheet to the oven and bake for an additional 10 minutes.
  6. Remove the dish from the oven, garnish with fresh parsley, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven for best flavor revival.
