Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, and paprika (if using).
Cooking
- Spread the sweet potatoes out on a baking sheet in a single layer and bake for 20 minutes.
- While the sweet potatoes are baking, in a skillet over medium heat, cook the sausage until browned and cooked through (about 8–10 minutes). Remove from heat and set aside.
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Stir in honey and a splash of water, and then let it simmer for 2–3 minutes.
- After 20 minutes, take the sweet potatoes out of the oven and add the cooked sausage on top. Drizzle the honey garlic sauce over everything.
- Return the baking sheet to the oven and bake for an additional 10 minutes.
- Remove the dish from the oven, garnish with fresh parsley, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven for best flavor revival.
