  • 1 pound andouille sausage, sliced
  • 1 each red bell pepper, chopped
  • 1 each green bell pepper, chopped
  • 1 each onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 teaspoon Cajun seasoning
  • to taste Salt and pepper
  • Olive oil, for cooking

Method
 

Preparation
  1. Begin by heating a large skillet over medium-high heat. Add a drizzle of olive oil to the pan.
  2. Once the oil is shimmering, add the sliced andouille sausage. Cook until it’s nicely browned, stirring occasionally for about 5-7 minutes.
  3. Toss in the sliced onions and bell peppers. Sauté for another 5 minutes until the veggies are tender.
  4. Stir in the minced garlic and sauté for an additional minute until fragrant. Then, sprinkle the Cajun seasoning over the mixture, along with salt and pepper to taste.
  5. Pour the can of diced tomatoes (with their juices) into the skillet. Stir everything together and let it simmer for about 10 minutes, allowing the flavors to meld.
  6. After simmering, taste and adjust the seasoning if necessary. Serve hot, either on its own or with your choice of sides.

Notes

Serve with a green salad or garlic bread. Warm tortillas make a great addition for wraps. For leftovers, store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
