- Begin by heating a large skillet over medium-high heat. Add a drizzle of olive oil to the pan.
- Once the oil is shimmering, add the sliced andouille sausage. Cook until it’s nicely browned, stirring occasionally for about 5-7 minutes.
- Toss in the sliced onions and bell peppers. Sauté for another 5 minutes until the veggies are tender.
- Stir in the minced garlic and sauté for an additional minute until fragrant. Then, sprinkle the Cajun seasoning over the mixture, along with salt and pepper to taste.
- Pour the can of diced tomatoes (with their juices) into the skillet. Stir everything together and let it simmer for about 10 minutes, allowing the flavors to meld.
- After simmering, taste and adjust the seasoning if necessary. Serve hot, either on its own or with your choice of sides.
Notes
Serve with a green salad or garlic bread. Warm tortillas make a great addition for wraps. For leftovers, store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
