Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked sausage.
- Place a tortilla on a flat surface. Spoon a portion of the egg and sausage mixture into the center, then roll it tightly to form an enchilada. Repeat for all tortillas.
- Place the rolled enchiladas side by side in a greased baking dish. Pour salsa evenly over the top.
- Sprinkle shredded cheese across the top of the enchiladas.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped green onions, and serve hot.
Notes
If using leftovers, store in an airtight container for up to 3 days in the fridge or freeze for up to a month. Reheat in the oven at 350°F until heated through or microwave until warm.
