  • 2 cups cooked sausage (halal)
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small tortillas
  • 1 cup salsa
  • 1 tsp salt
  • 1 tsp pepper
  • Chopped green onions for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked sausage.
  3. Place a tortilla on a flat surface. Spoon a portion of the egg and sausage mixture into the center, then roll it tightly to form an enchilada. Repeat for all tortillas.
  4. Place the rolled enchiladas side by side in a greased baking dish. Pour salsa evenly over the top.
  5. Sprinkle shredded cheese across the top of the enchiladas.
  6. Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven, garnish with chopped green onions, and serve hot.

Notes

If using leftovers, store in an airtight container for up to 3 days in the fridge or freeze for up to a month. Reheat in the oven at 350°F until heated through or microwave until warm.
