Preparation
- Start by gathering all ingredients and prepping them. Chop the kale, dice the onion, and mince the garlic.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned and crispy, around 7-10 minutes, breaking the sausage into smaller pieces as it cooks.
- Once the sausage is cooked through, add the diced onion and minced garlic to the skillet. Stir well and cook for another 3-5 minutes until the onion is translucent.
- Gradually mix in the chopped kale, stirring until it’s wilted and bright green, which should take about 3-4 minutes.
- Sprinkle salt, pepper, and red pepper flakes over the mix. Optionally, add the chicken broth and let it simmer for a couple more minutes.
Serving
- Plate your Sausage and Kale Skillet and enjoy it hot, perhaps with some crusty bread on the side to soak up those delicious juices.
Notes
If you’re not a fan of kale, consider using spinach or Swiss chard. For the sausage, a leaner option like chicken or turkey sausage can be used. Timing is important; allow the sausage to brown for extra flavor and be careful not to overcook the kale.
