Step 1: Cook the Sausage
In a large skillet, cook the ground sausage over medium heat until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the skillet.
Step 2: Scramble the Eggs
In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet with the sausage drippings. Cook over medium heat, stirring occasionally, until the eggs are scrambled and fluffy, about 3-4 minutes. Stir in the cooked sausage and shredded cheese. Remove from heat and let the mixture cool slightly.
Step 3: Prepare the Dough
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Roll out the pizza dough into a large rectangle, about 12x16 inches.
Step 4: Assemble the Rolls
Spread the sausage and egg mixture evenly over the dough, leaving a 1-inch border around the edges. Roll the dough tightly into a log, starting from the long side. Cut the log into 8 equal pieces and place them seam-side down on the baking sheet.
Step 5: Bake
Bake for 20-25 minutes, or until the rolls are golden brown and the dough is cooked through.
