  • 2 tablespoons satay sauce
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce

Method
 

Cooking the Rice
  1. Begin by heating a non-stick pan over medium heat. Add your cooked rice, pressing it down to form an even layer.
  2. Let it cook undisturbed for about 5-7 minutes or until the bottom is golden brown. Flip and cook the other side until crispy for another 5-7 minutes.
Preparing the Vegetables
  1. While your rice is crisping, chop your mixed vegetables into bite-sized pieces.
Mixing the Sauce
  1. In a small bowl, mix together the satay sauce, lime juice, and soy sauce.
Combining Ingredients
  1. In a large bowl, add the crispy rice, chopped vegetables, and peanuts.
  2. Drizzle the satay sauce mixture over the top and gently toss to combine.
Garnishing and Serving
  1. Garnish with fresh cilantro for an added pop of flavor and color.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for the best results, but note that the rice may lose some crispiness.
