Ingredients
  

For the pie crust
  • 1 piece pie crust (store-bought or homemade)
For the filling
  • 1 can coconut milk
  • 1 cup shredded coconut
  • 1 cup caramel sauce
  • 1 cup chocolate chips
  • 1/2 cup crushed shortbread cookies
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using a store-bought crust, follow the package instructions for pre-baking. If making homemade, roll out your dough, fit it into a pie plate, and blind bake until lightly golden, about 10-12 minutes.
  3. In a bowl, mix the coconut milk, shredded coconut, caramel sauce, crushed shortbread cookies, and cocoa powder. Stir until well combined.
  4. Pour the coconut mixture into the pre-baked pie crust, spreading it evenly with a spatula.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the filling is set.
Finishing Touches
  1. While the pie is baking, melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Once the pie is out of the oven, drizzle the melted chocolate over the top and allow it to cool at room temperature.
  3. For the best texture, refrigerate for at least 2 hours before serving.

Notes

To keep the pie fresh, store it covered in the refrigerator for about 4-5 days. For longer storage, freeze it for up to 2 months. Thaw in the fridge overnight or warm in the oven at 325°F (160°C) for 10-15 minutes before serving.
