Preparation
- Preheat your oven to 350°F (175°C).
- If using a store-bought crust, follow the package instructions for pre-baking. If making homemade, roll out your dough, fit it into a pie plate, and blind bake until lightly golden, about 10-12 minutes.
- In a bowl, mix the coconut milk, shredded coconut, caramel sauce, crushed shortbread cookies, and cocoa powder. Stir until well combined.
- Pour the coconut mixture into the pre-baked pie crust, spreading it evenly with a spatula.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the filling is set.
Finishing Touches
- While the pie is baking, melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Once the pie is out of the oven, drizzle the melted chocolate over the top and allow it to cool at room temperature.
- For the best texture, refrigerate for at least 2 hours before serving.
Notes
To keep the pie fresh, store it covered in the refrigerator for about 4-5 days. For longer storage, freeze it for up to 2 months. Thaw in the fridge overnight or warm in the oven at 325°F (160°C) for 10-15 minutes before serving.
