Cookie Base
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened shredded coconut
Toppings
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate chips can use dark or milk chocolate based on preference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, beat the softened butter with granulated and brown sugars until light and fluffy, about 2-3 minutes.
  4. Gradually mix the dry ingredients into the butter mixture. Stir until a dough forms.
  5. Fold in the shredded coconut until evenly distributed throughout the dough.
  6. Scoop about 1 tablespoon of dough and shape into a ball. Place them on the prepared sheet and make a small indentation in the center of each ball.
Baking
  1. Bake for 10-12 minutes or until the edges start turning golden brown. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
Topping
  1. Once cooled, drizzle the melted caramel sauce on top. Melt the chocolate chips in a microwave and drizzle over the cookies to finish.

Notes

To keep your Samoas Cookies at their best, store them in an airtight container at room temperature for about a week. If you need longer shelf life, freeze them for up to two months. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for a few minutes.
