Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a separate large bowl, beat the softened butter with granulated and brown sugars until light and fluffy, about 2-3 minutes.
- Gradually mix the dry ingredients into the butter mixture. Stir until a dough forms.
- Fold in the shredded coconut until evenly distributed throughout the dough.
- Scoop about 1 tablespoon of dough and shape into a ball. Place them on the prepared sheet and make a small indentation in the center of each ball.
Baking
- Bake for 10-12 minutes or until the edges start turning golden brown. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
Topping
- Once cooled, drizzle the melted caramel sauce on top. Melt the chocolate chips in a microwave and drizzle over the cookies to finish.
Notes
To keep your Samoas Cookies at their best, store them in an airtight container at room temperature for about a week. If you need longer shelf life, freeze them for up to two months. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for a few minutes.
