Dry Ingredients
  • 1 cup almond flour Can be substituted with oat flour.
  • 1/2 cup protein powder (vanilla or maple flavor)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
Wet Ingredients
  • 1/4 cup maple syrup
  • 1/4 cup almond butter Can be substituted with any nut or seed butter.
  • 1/4 teaspoon vanilla extract
Optional Add-ins
  • 1/4 cup chocolate chips Optional, check for vegan options if necessary.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, protein powder, salt, and baking soda.
  3. In another bowl, whisk together the maple syrup, almond butter, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until thoroughly combined. Gently fold in chocolate chips if using.
  5. Line an 8x8 inch baking pan with parchment paper and transfer the mixture into the pan, spreading it evenly.
  6. Bake for about 20-25 minutes until the edges are golden brown and a toothpick inserted comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper, place them on a wire rack, and cool completely before slicing into squares.

Notes

Store in an airtight container at room temperature for 4-5 days or refrigerate for up to 2 weeks. To freeze, wrap tightly in plastic or parchment paper.
