Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, protein powder, salt, and baking soda.
- In another bowl, whisk together the maple syrup, almond butter, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients and stir until thoroughly combined. Gently fold in chocolate chips if using.
- Line an 8x8 inch baking pan with parchment paper and transfer the mixture into the pan, spreading it evenly.
- Bake for about 20-25 minutes until the edges are golden brown and a toothpick inserted comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper, place them on a wire rack, and cool completely before slicing into squares.
Notes
Store in an airtight container at room temperature for 4-5 days or refrigerate for up to 2 weeks. To freeze, wrap tightly in plastic or parchment paper.
