Preparation
- Start by cutting the chicken thighs into bite-sized pieces.
- In a mixing bowl, combine cornstarch, flour, salt, black pepper, garlic powder, onion powder, and paprika. Toss the chicken pieces in the mixture until they are evenly coated.
Cooking
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Once the oil is hot, add the coated chicken in a single layer. Fry for about 4-5 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the chicken to a plate lined with paper towels to absorb any excess oil.
Serving
- Transfer the chicken to a serving platter. Garnish with chopped cilantro and serve with lime wedges on the side.
Notes
Marinate for flavor by using half the amount of spices for 30 minutes before coating. Ensure the oil is hot enough before frying to keep the chicken crispy. Chicken breasts may be used but adjust frying time.
