Ingredients
  

  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
  • 2 hard-boiled eggs quartered
  • 1 can tuna drained (or substitute with flaked salmon)
  • 8 oz smoked salmon flaked
  • 1/2 cup green beans trimmed and blanched
  • 1/4 cup olives black or green
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Method
 

  1. Prepare the Ingredients: Start by washing your mixed greens thoroughly and chopping your vegetables. Hard-boil your eggs and set aside to cool before slicing.
  2. Blanch the Green Beans: In a small pot, bring water to a boil. Add the trimmed green beans and blanch them for about 2-3 minutes. Remove and immediately place them in cold water to stop the cooking process. Drain and set aside.
  3. Assemble the Salad Base: In a large serving bowl, add the mixed greens, cherry tomatoes, sliced cucumber, and red onion. Toss these ingredients lightly to mix.
  4. Add the Proteins: Flake the smoked salmon over the salad and add the drained canned tuna (or additional salmon if preferred).
  5. Top with Eggs and Beans: Decorate your salad with the quartered eggs and blanched green beans.
  6. Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Adjust seasonings to taste.
