- In a large pot over medium heat, add a drizzle of olive oil. Once heated, toss in the diced onion and sauté until translucent for about 5 minutes.
- Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms soften.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for around 10 minutes, allowing the flavors to mingle.
- Stir in the heavy cream and shredded rotisserie chicken, heating through for another 5 minutes.
- Add salt, black pepper, and dried thyme, adjusting the seasoning to your taste.
- Ladle the soup into bowls and sprinkle freshly chopped parsley on top before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
