Preparation
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and ⅓ cup sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9×9-inch baking pan lined with parchment paper, ensuring it’s evenly distributed.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese and ½ cup sugar together until smooth and creamy.
- Add the vanilla extract and mix well.
- Beat in the eggs one at a time, mixing until just combined to avoid overmixing.
- Gently fold the chopped Rolo candies into the filling mixture.
- Pour the filling over the prepared crust, spreading it evenly with a spatula.
Baking and Chilling
- Bake in the preheated oven for 30-35 minutes or until the center is set and slightly jiggly.
- Remove from the oven and let it cool to room temperature.
- Refrigerate for at least 2 hours before cutting into bars.
Serving
- Melt chocolate chips and drizzle over the chilled bars and top with extra chopped Rolos for an indulgent finish.
Notes
