Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.333 cups granulated sugar
For the cheesecake filling
  • 16 oz cream cheese, softened Ensure it's at room temperature for smooth mixing.
  • 0.5 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Beat in one at a time to avoid overmixing.
  • 1 cup Rolo candies, chopped (plus extra for topping)
  • 0.333 cups chocolate chips for drizzling (optional)

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and ⅓ cup sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9×9-inch baking pan lined with parchment paper, ensuring it’s evenly distributed.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese and ½ cup sugar together until smooth and creamy.
  2. Add the vanilla extract and mix well.
  3. Beat in the eggs one at a time, mixing until just combined to avoid overmixing.
  4. Gently fold the chopped Rolo candies into the filling mixture.
  5. Pour the filling over the prepared crust, spreading it evenly with a spatula.
Baking and Chilling
  1. Bake in the preheated oven for 30-35 minutes or until the center is set and slightly jiggly.
  2. Remove from the oven and let it cool to room temperature.
  3. Refrigerate for at least 2 hours before cutting into bars.
Serving
  1. Melt chocolate chips and drizzle over the chilled bars and top with extra chopped Rolos for an indulgent finish.

Notes

For even sweeter results, consider serving with a scoop of vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to a week.
