  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper for easy clean-up.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set this mixture aside.
  3. In a large mixing bowl, beat the softened butter with the granulated sugar and brown sugar until fluffy, about 2-3 minutes.
  4. Mix in the eggs one at a time, and then add the vanilla extract until well blended.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  6. Lightly flour your work surface and roll out the dough to about 1/4 inch thickness. Use cookie cutters to create desired shapes.
  7. Place the cut-out cookies on prepared baking sheets, leaving space between each to allow for spreading during baking.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until edges are slightly crispy.
  2. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Decoration
  1. Drizzle some melted chocolate, sprinkle some colorful treats, or dust with powdered sugar.

Notes

Store cookies in an airtight container at room temperature, lasting up to a week. They can be frozen for up to three months. Thaw at room temperature and reheat briefly in the oven.
