Preparation
- Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper for easy clean-up.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set this mixture aside.
- In a large mixing bowl, beat the softened butter with the granulated sugar and brown sugar until fluffy, about 2-3 minutes.
- Mix in the eggs one at a time, and then add the vanilla extract until well blended.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
- Lightly flour your work surface and roll out the dough to about 1/4 inch thickness. Use cookie cutters to create desired shapes.
- Place the cut-out cookies on prepared baking sheets, leaving space between each to allow for spreading during baking.
Baking
- Bake in the preheated oven for 10-12 minutes, or until edges are slightly crispy.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Decoration
- Drizzle some melted chocolate, sprinkle some colorful treats, or dust with powdered sugar.
Notes
Store cookies in an airtight container at room temperature, lasting up to a week. They can be frozen for up to three months. Thaw at room temperature and reheat briefly in the oven.
