Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into approximately 1-inch pieces.
  3. In a large mixing bowl, combine the cubed sweet potatoes with olive oil, salt, and pepper, ensuring they are evenly coated.
Roasting
  1. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  2. Roast in the oven for 25-30 minutes, flipping them halfway through.
Finishing touches
  1. Once the sweet potatoes are golden and tender, remove them from the oven and crumble goat cheese on top.
  2. Drizzle honey over the roasted sweet potatoes.
  3. Garnish with fresh herbs if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in a preheated oven at 375°F (190°C) for about 10-15 minutes. Avoid the microwave to prevent them from becoming mushy.
