  • 3 tablespoons honey
  • ½ cup crumbled feta cheese

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure an even roast and crispy edges.
  2. In a large mixing bowl, toss the sliced sweet potatoes with olive oil, salt, and black pepper until evenly coated.
  3. Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Avoid crowding for optimal roasting.
  4. Place the baking sheet in the oven and roast for about 25 minutes, flipping the slices halfway through until golden brown and crisp on the outside.
  5. Once removed from the oven, drizzle the sweet potatoes generously with honey. Sprinkle the crumbled feta on top immediately while they’re still warm to help it melt slightly.
  6. Serve warm as an appetizer or side dish and enjoy!

Notes

For substitutions, use goat cheese or a dairy-free alternative. Tossing in chopped fresh herbs such as rosemary or thyme can add flavor. Store leftovers in an airtight container for 3 days or freeze for longer storage. Reheat in a 350°F (175°C) oven for 10-15 minutes.
