- Preheat your oven to 425°F (220°C) to ensure an even roast and crispy edges.
- In a large mixing bowl, toss the sliced sweet potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Avoid crowding for optimal roasting.
- Place the baking sheet in the oven and roast for about 25 minutes, flipping the slices halfway through until golden brown and crisp on the outside.
- Once removed from the oven, drizzle the sweet potatoes generously with honey. Sprinkle the crumbled feta on top immediately while they’re still warm to help it melt slightly.
- Serve warm as an appetizer or side dish and enjoy!
