Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into rounds about 1/2 inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until they are well coated.
  4. Spread them out in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Place the sweet potatoes in the preheated oven and roast for 25-30 minutes, flipping halfway through.
  2. Remove from the oven, sprinkle crumbled feta on top, and drizzle with honey.
  3. Return to the oven for an additional 5-10 minutes.
Serving
  1. Remove from the oven and sprinkle with fresh herbs if desired. Serve warm.
