Ingredients
  

  • Sausage links Italian or your choice – about 1 pound
  • Baby potatoes halved or quartered – about 1.5 pounds
  • Olive oil – 3 tablespoons
  • Garlic minced – 4 cloves
  • Fresh rosemary or herbs of choice – 2 teaspoons, chopped
  • Salt – 1 teaspoon
  • Pepper – 1 teaspoon
  • Bell peppers sliced, optional – 1 cup

Instructions
 

  • Preheat Your Oven: First things first, preheat your oven to 400°F (200°C). This will ensure the sausages and potatoes roast evenly.
  • Prepare the Ingredients: In a large mixing bowl, add the halved potatoes, minced garlic, chopped rosemary, salt, and pepper. Drizzle with olive oil and toss everything together until well coated.
  • Add the Sausage: Slice the sausages into bite-sized pieces and add them to the mixing bowl. Toss again to combine all the ingredients.
  • Spread on Baking Sheet: Transfer the mixture onto a baking sheet, spreading it out in a single layer to ensure even roasting.
