Preparation
- Preheat your oven to 425°F (220°C).
- Wash the red potatoes thoroughly to remove any dirt. Cut them into even-sized quarters or cubes (about 1-1.5 inches).
- In a large bowl, toss the potato pieces with olive oil, salt, pepper, garlic powder, and rosemary (if using) until thoroughly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet, ensuring there's space between them.
Cooking
- Place the baking sheet in the preheated oven and roast for about 30-35 minutes, flipping the potatoes halfway through.
- Potatoes should be golden and fork-tender when done.
Serving
- Remove from the oven and let cool slightly before serving. Enjoy alone or with your favorite sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a preheated oven at 375°F (190°C) for about 15-20 minutes.
