  • 1 teaspoon garlic powder Use fresh garlic for stronger flavor if preferred.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the red potatoes thoroughly to remove any dirt. Cut them into even-sized quarters or cubes (about 1-1.5 inches).
  3. In a large bowl, toss the potato pieces with olive oil, salt, pepper, garlic powder, and rosemary (if using) until thoroughly coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet, ensuring there's space between them.
Cooking
  1. Place the baking sheet in the preheated oven and roast for about 30-35 minutes, flipping the potatoes halfway through.
  2. Potatoes should be golden and fork-tender when done.
Serving
  1. Remove from the oven and let cool slightly before serving. Enjoy alone or with your favorite sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a preheated oven at 375°F (190°C) for about 15-20 minutes.
