Ingredients
  

Fish
  • 4 pieces Mahi Mahi fillets (6-ounce each)
Vegetables
  • 1 bunch Asparagus (trimmed)
  • 1 piece Bell pepper (sliced)
  • 2 medium-sized Potatoes (cubed)
Marinade
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Pepper (or to taste)
  • 1 teaspoon Garlic powder
  • 1 piece Lemon (juiced and zested)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the asparagus, bell pepper slices, and cubed potatoes in half the olive oil, season with salt and pepper, and spread them on a large sheet pan.
  3. Rinse the mahi mahi fillets under cold water and pat them dry with a paper towel. Place them on the sheet pan among the vegetables.
  4. In a small bowl, mix the remaining olive oil, garlic powder, lemon juice, and lemon zest. Brush this mixture over the mahi mahi fillets.
Cooking
  1. Place the sheet pan in the preheated oven and roast for about 15-20 minutes, or until the mahi mahi is opaque and flakes easily with a fork, and the vegetables are tender.
  2. Once done, let it rest for a couple of minutes, then garnish with fresh lemon slices and serve.

Notes

Substitutions for vegetables can include zucchini or carrots. Adjust salt according to taste. Store leftovers in an airtight container for up to three days. Reheat in the oven for best texture.
