Preparation
- Start by roasting your jalapenos. You can do this under a broiler or over an open flame until they’re charred and soft. Let them cool, peel off the skin, and chop them into small pieces.
- In a medium bowl, combine the softened cream cheese with the shredded cheddar. Add the roasted jalapenos, and season with salt and pepper to taste. Mix until well combined.
- Take your slices of bread and butter one side of each slice generously.
- On the non-buttered side of one slice, spread the cheese mixture evenly. Top it with the second slice, butter side facing out.
Cooking
- In a skillet over medium heat, place the sandwich. Cook for about 3-4 minutes or until the bottom is golden brown.
- Carefully flip and cook the other side for another 3-4 minutes, until it’s also golden and the cheese is melting.
- Once cooked, remove from the skillet, slice, and serve warm.

Notes
Feel free to experiment with different types of cheese like mozzarella or pepper jack for added flavor! Keep an eye on the heat when cooking; too high can burn the bread before the cheese melts properly. Make sure your butter is at room temperature for easier spreading and a more consistent toast. If you have leftovers, store them in an airtight container in the refrigerator for 2-3 days or freeze them tightly wrapped for up to one month.
