Ingredients
  

For the Crostini
  • 1 Baguette 1 Baguette, sliced into ½ inch pieces
  • 8 oz 8 oz Brie cheese, sliced or cut into pieces Can substitute with goat cheese for a different flavor.
  • 1 cup 1 cup Red grapes, washed and stemmed
  • 2 tablespoons 2 tablespoons Olive oil Plus extra for brushing.
  • 1 tablespoon 1 tablespoon Honey
  • ½ teaspoon ½ teaspoon Salt
  • ¼ teaspoon ¼ teaspoon Pepper
  • Fresh thyme, optional, for garnishing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the washed red grapes with olive oil, honey, salt, and pepper, ensuring they are evenly coated.
  3. Roast the grapes in the oven for about 15-20 minutes or until they start to burst and caramelize.
  4. While the grapes are roasting, place the sliced baguette on another baking sheet, brush with a little olive oil and toast in the oven for about 5-7 minutes until golden brown.
  5. Layer the toasted baguette slices with Brie cheese followed by the roasted grapes.
  6. Return the assembled crostini to the oven and bake for another 5 minutes, allowing the cheese to melt slightly.
  7. Finish with fresh thyme if desired, and serve warm.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 2 days. Reheat at 350°F (175°C) for 5-10 minutes.
