  • 1 bulb garlic
  • ½ cup unsalted butter, softened

Method
 

Roasting the Garlic
  1. Preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and place in the oven. Roast for about 30-35 minutes until the cloves are soft and caramelized.
Cooking the Noodles
  1. While the garlic is roasting, bring a large pot of salted water to a boil. Add your spaghetti or favored noodles and cook according to package instructions until al dente. Reserve about ½ cup of pasta cooking water, then drain the noodles.
Preparing the Garlic Butter
  1. Once the garlic is roasted, let it cool slightly. Squeeze the roasted garlic cloves into a bowl, mash them to a paste, and mix with softened butter. Add salt and pepper to taste.
Combining Everything
  1. In a large skillet over low heat, add the garlic butter mixture and cooked noodles. Mix well, adding reserved pasta water a little at a time to create a smooth sauce.
