Preparation
  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a mixing bowl, combine melted butter, minced garlic, lemon zest, lemon juice, olive oil, salt, pepper, and thyme. Stir until well combined.
  3. Pat the chicken thighs dry with paper towels to ensure maximum crispiness. Then, place them in a baking dish.
  4. Pour the garlic butter mixture over the chicken, ensuring that each piece is generously coated.
Cooking
  1. Place the baking dish in the preheated oven. Roast for about 35-40 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius) and the skin is golden brown and crispy.
  2. Once done, take out the chicken and let it rest for a few minutes. Sprinkle with fresh parsley before serving.

Notes

Substitutions: If you want to reduce the butter, feel free to use olive oil instead. Timing: Ensure the chicken is fully submerged in the butter mixture for tender, juicy meat. Always let your chicken rest after roasting to keep it moist.
