Ingredients

  • 2 cans of white beans cannellini or great northern, drained and rinsed
  • 1 head of garlic roasted
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • Fresh herbs like parsley for garnish

Instructions

  • Prepare the Vegetables: Start by heating the olive oil in a large pot over medium heat. Toss in the diced onion, carrots, and celery, sautéing until they’re tender—about 5-7 minutes. Your kitchen will soon be smelling amazing!
  • Add Garlic and Beans: Once the veggies are soft, add the roasted garlic, white beans, and rosemary. Stir to combine everything uniformly.
  • Bring to Simmer: Pour in the broth and bring the mixture to a simmer. Allow it to cook for about 15-20 minutes so that all those delightful flavors meld together.
  • Blend: For your preferred texture, use an immersion blender to blend until smooth. If you enjoy a chunkier soup, feel free to leave some beans whole!
  • Season and Serve: Finish your masterpiece by seasoning with salt and pepper to taste. Serve hot, garnished with fresh herbs, and enjoy the fruits of your labor!
