Preparation
- Preheat your oven to 400°F (200°C).
- Cut the top off the head of garlic to expose the individual cloves. Drizzle with a teaspoon of olive oil and wrap in aluminum foil. Roast in the oven for about 25 minutes, or until cloves are soft and fragrant.
- While the garlic is roasting, heat the remaining olive oil in a skillet over medium heat. Add the sliced mushrooms, season with salt and pepper, and sauté for about 5-7 minutes until they are golden and tender. Set aside.
Assembly
- Halve the loaf of French bread lengthwise.
- Squeeze out the soft roasted garlic cloves and spread them evenly across the cut sides of the bread.
- Scatter the sautéed mushrooms over the garlic, followed by a generous layering of shredded mozzarella cheese.
Baking
- Place the assembled bread on a baking sheet and bake for about 10-12 minutes, or until the cheese is melted and bubbly and the edges are slightly crispy.
- Remove from the oven, add a sprinkle of freshly chopped parsley for garnish, and slice into individual pieces.
