  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Assembly Ingredients
  • 4 pieces pita bread
  • 1 cup hummus
  • 2 cups fresh vegetables (e.g., lettuce, tomatoes, cucumbers, onions) Choose based on preference
  • 1 cup tzatziki sauce (optional) For drizzling

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper, ensuring all chickpeas are well coated.
Roasting
  1. Spread the seasoned chickpeas on a baking sheet in a single layer and bake for 20-25 minutes, or until golden and crispy. Shake the pan halfway through.
Topping Preparation
  1. While the chickpeas roast, slice your fresh vegetables.
Assembly
  1. Warm the pita bread in the oven for 2-3 minutes.
  2. Spread hummus on the warm pita, add a generous amount of roasted chickpeas, and top with fresh vegetables. Drizzle with tzatziki sauce if desired.
Serving
  1. Roll up your gyros and enjoy!

Notes

Store unassembled gyros in an airtight container in the fridge for up to 3 days. Reheat chickpeas at 350°F (175°C) for about 10 minutes to restore crispiness. Make sure to dry chickpeas thoroughly for the best crunch.
