Ingredients
  

For the topping
  • 2 cups Fresh cherries, pitted and halved Choose ripe cherries for natural sweetness.
  • 1 cup Feta cheese, crumbled Perfectly crumbly feta enhances taste.
  • ½ cup Fresh mint leaves, chopped
For the crostini
  • 1 piece Baguette, sliced into thin pieces
  • 3 tablespoons Olive oil For both roasting and drizzling.
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved cherries with 1 tablespoon of olive oil and a pinch of salt. Toss to coat.
  3. Spread cherries on a baking sheet in a single layer and roast for about 15-20 minutes, until caramelized.
  4. On another baking sheet, place baguette slices, drizzle or brush with olive oil, and sprinkle with salt and pepper. Toast in the oven for about 10 minutes, or until golden brown.
Assembly
  1. In a bowl, mix roasted cherries with crumbled feta and chopped mint. Adjust seasoning as needed.
  2. Top each toasted baguette slice with a generous spoonful of the cherry mixture.
  3. Transfer to a platter and serve immediately.

Notes

To avoid soggy crostinis, store the cherry topping separately from the bread. Re-toast baguette slices to maintain crunchiness. For alternatives, goat cheese can replace feta, and honey can add extra sweetness.
