Preparation
- Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by greasing it lightly or lining it with parchment paper.
- Spread the pitted and halved cherries evenly on a baking sheet. Roast them in the oven for about 10 minutes until they become soft and the juices start to release.
- In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove it from the heat and stir in the granulated sugar until well combined. Allow it to cool for a few minutes before adding the eggs and vanilla extract.
- In a separate bowl, mix together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay!
- Gently fold in the roasted cherries and their juices into the brownie batter.
Baking
- Pour the brownie batter into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Remove from the oven and let cool in the pan before slicing into squares. Enjoy these delicious brownies warm or at room temperature!
