Ingredients

  • 4 medium-sized beets, scrubbed clean and tops trimmed
  • 2 tablespoons olive oil Can substitute with avocado oil for a different flavor.
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper (to taste)
  • optional Fresh herbs (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Scrub the beets under running water. Trim the tops to just above the root without peeling them.
  3. Chop the beets into uniform pieces, about 1-inch cubes. Place in a large bowl, drizzle with olive oil, salt, and pepper, and toss to coat evenly.
Roasting
  1. Spread the beets out on a baking sheet lined with parchment paper in a single layer.
  2. Roast in the oven for about 45-60 minutes, or until a fork easily pierces through them.
Serving
  1. Remove the beets from the oven and allow to cool for a few minutes. Garnish with fresh herbs if desired.

Notes

Roasted beets can be stored in an airtight container in the refrigerator for up to 5 days. To reheat, microwave for 30 seconds to 1 minute or re-roast in the oven at 350°F (175°C) for about 10 minutes.
