  • 1 cup fresh ricotta cheese Well-drained
  • 1/2 cup finely chopped pistachios Plus extra for garnish
  • 2 tablespoons honey Adjust according to your sweetness preference
  • 1/4 teaspoon vanilla extract

  • 1 serving biscuit or cookie base Store-bought or homemade

Method
 

Preparation
  1. Prepare the biscuit base by crushing it into fine crumbs and pressing it into the bottom of bite-sized molds or a serving dish.
  2. In a mixing bowl, combine the ricotta cheese, finely chopped pistachios, honey, vanilla extract, and a pinch of salt. Blend well until smoothly combined.
  3. Using a small scoop or spoon, dollop the ricotta mixture onto the prepared biscuit base, ensuring each serving is filled adequately.
  4. Cover the bites with plastic wrap and refrigerate for at least one hour to allow them to set.
  5. Before serving, drizzle with extra honey and sprinkle with additional chopped pistachios for garnish.

Notes

These bites taste even better when made a day in advance. Store in an airtight container in the fridge for up to 3 days, or freeze for up to a month. Let thaw at room temperature 30 minutes before serving.
