Preparation
- Prepare the biscuit base by crushing it into fine crumbs and pressing it into the bottom of bite-sized molds or a serving dish.
- In a mixing bowl, combine the ricotta cheese, finely chopped pistachios, honey, vanilla extract, and a pinch of salt. Blend well until smoothly combined.
- Using a small scoop or spoon, dollop the ricotta mixture onto the prepared biscuit base, ensuring each serving is filled adequately.
- Cover the bites with plastic wrap and refrigerate for at least one hour to allow them to set.
- Before serving, drizzle with extra honey and sprinkle with additional chopped pistachios for garnish.
Notes
These bites taste even better when made a day in advance. Store in an airtight container in the fridge for up to 3 days, or freeze for up to a month. Let thaw at room temperature 30 minutes before serving.
