  • 1 pinch salt Helps to balance flavors.
For the Coating
  • ½ cup shelled and unsalted pistachios (chopped) Chop pistachios finely for even distribution.
  • few leaves fresh mint (for garnish, optional) Adds a fresh touch when serving.

  1. In a mixing bowl, combine the ricotta cheese, honey, and a pinch of salt. If you're using vanilla extract, add it in now. Blend gently until the mixture is smooth but retains some texture.
  2. Fold in the chopped pistachios carefully, ensuring they are evenly distributed throughout the ricotta.
  3. Using your hands, take small portions of the ricotta mixture and roll them into bite-sized balls (about 1 inch in diameter).
  4. Place the bites onto a parchment-lined plate and refrigerate for about 20 minutes to firm them up.
Serving
  1. Once chilled, drizzle with additional honey and garnish with mint leaves, if desired. Serve chilled for a refreshing dessert experience.
