Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x9-inch baking dish with butter or non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry flour mixture to the butter mixture, mixing until just combined. Don’t overmix.
- Fold in the ricotta cheese and chocolate chips gently until everything is evenly distributed.
Baking
- Pour the batter into the prepared baking dish, smoothing the top with a spatula.
- Bake for 25-30 minutes or until the bars are golden brown and a toothpick inserted into the center comes out clean.
Serving
- Allow the bars to cool for at least 10 minutes before cutting them into squares. Serve warm, or let them cool completely for later.
Notes
For variations, you can use low-fat ricotta or swap in coconut oil for butter. Add nuts if desired but adjust chocolate chips accordingly. Store in an airtight container for up to 5 days or freeze for up to 2 months.
