  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons butter Can substitute with coconut oil for non-dairy version.
  • Orange food coloring (as needed) Use to achieve desired pumpkin color.
  • Green candy melts or green fondant for stems Used for decorating the pumpkin shapes.
  • Non-stick cooking spray To grease the mixing bowl and hands.

Preparation
  1. Begin by greasing a large mixing bowl and your hands with non-stick cooking spray.
  2. In a large saucepan over low heat, melt the butter. Once melted, add the mini marshmallows, stirring until fully melted and smooth.
  3. Once the marshmallows are melted, mix in a few drops of orange food coloring. Stir well until the mixture is a vibrant orange hue.
  4. Remove the saucepan from heat, and gently fold in the Rice Krispies cereal. Ensure all the cereal is coated evenly.
  5. While the mixture is still warm, take handfuls and shape them into small, round pumpkin forms.
  6. Melt the green candy melts or prepare the green fondant and shape it into little stems to place on top of your pumpkin shapes.
  7. Allow your Rice Krispie Treat Pumpkins to cool completely on a baking sheet before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to a month, layered with parchment paper. Let them sit at room temperature before serving for best texture.
