Ingredients
  

For the Rice and Fillings
  • 2 cups cooked sushi rice Ensure it is cooled before using.
  • 4 sheets nori (seaweed)
  • 1/2 cup cucumber, sliced The fresher, the better!
  • 1 medium carrot, julienned
  • 4 slices cooked chicken or tofu Adjust based on preference.
  • 1 whole avocado, sliced
Seasoning
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • to taste salt and pepper

Method
 

Preparation
  1. Cook 2 cups of sushi rice according to package instructions and let it cool to room temperature.
  2. Slice cucumber, julienne carrot, and slice avocado.
Assembly
  1. Place a sheet of nori shiny side down on a clean surface or bamboo mat.
  2. Wet your hands with water and grab a handful of sushi rice. Spread it evenly over the nori, leaving about an inch on the top edge.
  3. Layer fillings on top of the rice, starting with chicken or tofu, followed by cucumber, carrot, and avocado.
  4. Drizzle with soy sauce and sesame oil, and sprinkle with salt and pepper to taste.
  5. Starting from the bottom, carefully roll the nori over the fillings, pressing slightly to compact the ingredients until you have a tight log.
  6. Use a sharp knife, dipped in water, to slice the roll into bite-sized pieces. Serve immediately.

Notes

Avoid overstuffing your sandwich for easier rolling. If making in advance, store in an airtight container with parchment paper to prevent sticking. Best enjoyed cold or at room temperature, reheat gently if necessary.
