For the Filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt for the crust.
  3. Add the softened butter and mix until crumbly. Press the mixture evenly into the bottom of a greased 9x9-inch baking pan.
Baking the Crust
  1. Bake the crust in the oven for about 15-20 minutes or until lightly golden. Let it cool.
Making the Filling
  1. In another bowl, whisk together eggs, sugar, flour, and vanilla extract until well combined.
  2. Gently fold in the chopped rhubarb.
Combining and Final Baking
  1. Pour the rhubarb filling over the cooled crust evenly.
  2. Return to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly golden.
Cooling and Serving
  1. Allow the bars to cool completely before enjoying. Cut into squares and dust with powdered sugar if desired.

Notes

For added enjoyment, top with whipped cream or vanilla ice cream. Fresh fruit contrasts nicely with the tart rhubarb. Store in an airtight container in the refrigerator for up to five days or freeze for up to three months.
