  • 2 cups rhubarb, chopped Chop into small pieces for even cooking.
  • 1 cup sugar
  • 1 package (3 oz) red Jello (strawberry or raspberry) Flavor is up to your choice.
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup whipped cream (optional) For serving.

Preparation
  1. Gather all your ingredients to make the cooking process smooth.
  2. In a medium saucepan over medium heat, combine the chopped rhubarb and sugar. Stir gently until the sugar begins to dissolve.
  3. Cook for about 5-7 minutes until the rhubarb softens, but don’t let it turn mushy.
  4. In a large mixing bowl, dissolve the Jello in boiling water and stir until fully dissolved.
  5. Add the cooked rhubarb (along with any juices) to the Jello mixture. Stir in the cold water and mix well.
  6. Pour the mixture into a serving dish or individual cups. Refrigerate for at least 3 hours or until the Jello fully sets.
  7. Once set, top with whipped cream if desired and enjoy this delightful dessert!

Notes

This dessert is best enjoyed fresh. Store in the fridge for up to 5 days. Freezing is not recommended as it may lose texture.
