  • 2 cups mixed greens Any combination of lettuce or leafy greens can be used.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 medium bell pepper, diced Any color bell pepper works.
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup olives, sliced Black or green olives are both suitable.
  • 1/2 cup feta cheese, crumbled Feel free to substitute with another cheese if desired.
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (balsamic or red wine) Choose your preferred vinegar.
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  2. In a separate small bowl, whisk together the olive oil, vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat evenly.
  4. Cover the salad and refrigerate for at least 2 hours before serving. This allows the flavors to meld beautifully!

Notes

Customize the ingredients based on what you have on hand. Allowing the salad to sit in the fridge enhances the flavors. For sweetness, add dried cranberries or fresh fruit like apples or berries. Store any leftovers in an airtight container to maintain crispness.
