  • 4 cups cubed seedless watermelon About half a medium watermelon
  • 10-12 leaves fresh mint leaves
  • 1 juice lime Freshly squeezed for the best flavor
  • 2 cups sparkling water Chilled
  • to taste ice cubes

Method
 

Preparation
  1. Cut the seedless watermelon into cubes. Alternatively, blend the watermelon cubes until smooth and strain if desired.
  2. In a pitcher, add the fresh mint leaves and gently muddle with a muddler or the back of a spoon to release the aromatic oils.
  3. Pour the pureed or cubed watermelon into the pitcher. Add the lime juice and stir to combine all the flavors.
  4. Just before serving, carefully pour in the chilled sparkling water and stir gently to combine without losing carbonation.
  5. Fill glasses with ice and pour the watermelon mint mixture over the top. Garnish with extra mint leaves if desired, and enjoy.

Notes

For a unique twist, substitute fresh mint with basil. Serve immediately for optimal fizz, and if it sits, add a splash more sparkling water before serving. Always taste before serving to adjust lime juice based on personal preference.
