  • 2 pieces ripe peaches, sliced Opt for peaches that are slightly soft to the touch.
  • 4 cups mixed greens Wash and dry thoroughly.
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and dry the mixed greens thoroughly.
  2. Slice the peaches, chop the walnuts, and thinly slice the red onion.
Making the Dressing
  1. In a small bowl, combine the olive oil and balsamic vinegar. Add a pinch of salt and pepper to taste. Whisk until emulsified.
Building the Salad
  1. In a large salad bowl, add the mixed greens first.
  2. Layer on the peach slices, then sprinkle the crumbled feta cheese and sliced red onion over the top.
  3. Toss in the chopped walnuts for added crunch.
Dressing and Serving
  1. Drizzle the prepared dressing over the salad just before serving.
  2. Gently toss to combine all flavors without mushing the peaches.
  3. Taste and adjust seasoning if necessary.
  4. Plate the salad beautifully and enjoy.

Notes

For substitutions, nectarines or ripe mangoes can replace peaches. For a nut-free salad, sunflower seeds can replace walnuts. Serve immediately for best texture.
