Ingredients
  

Cream Mixture
  • 8 oz mascarpone cheese (softened) Use room temperature for easier mixing.
  • 1 cup heavy cream Whip until stiff peaks form.
  • 1/2 cup powdered sugar Adjust sweetness to taste.
  • 1 cup lemon curd (homemade or store-bought) Provides the lemon flavor.
  • Zest of 1 lemon Adds extra lemon flavor.
Layering
  • 12 to 14 pieces ladyfinger cookies Quickly dip in coffee before layering.
  • 1 cup strong brewed coffee (cooled completely) Ensure it’s not hot to avoid soggy ladyfingers.
  • Fresh slices lemon (for garnish) Optional garnish for serving.

Method
 

Preparation
  1. In a large mixing bowl, combine the softened mascarpone cheese with powdered sugar. Blend well until smooth and creamy.
  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture. Add lemon curd and lemon zest, then fold until fully combined.
Layering
  1. Quickly dip each ladyfinger into the cooled coffee, making sure not to soak them.
  2. Place a layer of coffee-soaked ladyfingers in a suitable dish. Spread half of the lemon mascarpone mixture over the ladyfingers.
  3. Repeat with another layer of ladyfingers and the remaining lemon mascarpone mixture on top.
Chilling and Serving
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  2. Garnish with fresh lemon slices and additional lemon zest before serving.

Notes

For a Halal-friendly version, substitute mascarpone with a blend of cream cheese and heavy cream. Ensure to chill overnight for the best flavor.
