Preparation
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
- In a medium bowl, combine 1 ½ cups of flour, ½ cup of sugar, and salt. Stir in the melted butter and vanilla extract until it resembles coarse crumbs. Reserve about one cup for the topping.
- Press the remaining mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes until lightly golden.
Lemon Filling
- While the crust is baking, whisk together the eggs, 1 cup of sugar, 2 tablespoons of flour, lemon zest, and lemon juice until fully combined.
Combine and Bake
- Pour the lemon filling over the baked crust, then sprinkle the reserved crumb mixture on top. Bake for an additional 20-25 minutes, or until the center is set.
Cooling and Serving
- Allow the bars to cool completely, then dust with powdered sugar before cutting.
Notes
Use fresh lemons for the best flavor. Don’t overmix the crust and topping to keep them crumbly. Chill in the refrigerator for at least an hour before serving.
