Ingredients
  

Main Ingredients
  • 2 large cucumbers, diced
  • 3 ripe tomatoes, chopped
  • 1 small red onion, finely chopped
  • 1 whole bell pepper (any color), diced
Herbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Wash the cucumbers and tomatoes thoroughly.
  2. Dice the cucumbers and chop the tomatoes into bite-sized pieces.
  3. Finely chop the red onion and bell pepper.
Mixing
  1. In a large mixing bowl, combine the diced cucumbers, tomatoes, red onion, and bell pepper.
  2. Add the freshly chopped parsley and mint, and toss to combine.
Dressing
  1. In a small bowl, whisk together the olive oil and lemon juice, adding a pinch of salt and pepper to taste.
  2. Drizzle the dressing over the salad mix and gently toss until everything is evenly coated.
Serving
  1. Allow the salad to sit for a couple of minutes before serving to blend the flavors.
  2. Dish it out into serving bowls or onto a large platter.

Notes

For added zest, you can include crumbled feta cheese or avocado. Prepare just before serving to retain freshness, but you can prep veggies in advance. Avoid over-salting to prevent a soggy salad.
